Enrico Serafino is a specialist in classic-method sparkling wine, having produced this style of wine since the foundation of the winery in 1878. The "Oudeis" Alta Langa Brut is the pinnacle of this long experience, made primarily from Pinot Noir for flavor and body, with 15% Chardonnay for elegance and added complexity. This is an exemplary vintage sparkling wine, showing a great depth of flavor and aromas from at least 3 years of bottle aging in contact with yeast cells.  The name Oudeis comes from the Greek "Odysseus" and means no one. By giving the Alta Langa Brut this name, the winery acknowledges that no one is at the origin of the wine complexity; only terroir has this ability.

The Alta Langa Brut Rosé is a variant on the standard theme, using 100% Pinot Nero (Pinot Noir) and picking up a pleasing rosé color and some red-fruit aromas from a short maceration on the skins before the initial fermentation. It is then finished with at least 36 months of bottle aging in contact with yeast cells.

The Alta Langa Brut Zero is a variant on the standard theme, catering to modern tastes for extremely dry sparkling wines. After its second fermentation to produce the bubbles, the Brut Zero ages in contact with yeast cells for over 5 years, and then does not receive the traditional dose of sugar for sweetening. The result is a rich and yet austere wine with no hint of sweetness.

Hailing from the historical vineyards of Alta Langa, the Zero 140 was created to show the best expression of the longevity and complexity of this appellation.  After spending at least 12 years on the lees in bottle, the Enrico Serafino Zero 140 is the longest aged on lees Italian sparkling wine.  Each vintage is dedicated to a different theme and the bottles are hand painted a different color to differentiate them in the cellar during the hand riddling process.  

Enrico Serafino "Grifo del Quartaro" Gavi del comune di Gavi is a classic example of Piedmont’s noble white wine made from the native Cortese grape. Gavi DOCG is the most esteemed source of Cortese wines and the town of Gavi, at its heart, is recognized to produce the finest expressions of the denomination.  Thanks to the sloping hills and exposure, as well as marly, white chalky and clay-rich earth, the area creates wines with clear-cut character, freshness, and minerality, as well as complex structure.  The grapes for this wine are sourced from a six-hectare vineyard in Monterotondo di Gavi. The name Grifo del Quartaro refers to an antique coin used by Genovese Lords (from the city of Genoa that is not far from the village of Gavi), who were the vineyard land-owners of the Gavi area.

Monterotondo, from the municipality of Gavi in the Roero region of southeast Piedmont, is one of the most prestigious MGA areas within the area.  The soils here are characterized by their chalky-sulphurous composition with white marls. These soils, coupled with an ideal microclimate, allow the Cortese grape to reach unique levels of complexity and elegance. Poggio della Rupe is the name of the estate where the one hectare of vineyards for this singular wine grow.  

Enrico Serafino "Pajena" Barbera d’Alba is the winery’s leading red, a very versatile wine that is particularly food-friendly and can be enjoyed on a daily basis. Barbera is Piedmont’s most popular red grape variety, grown in and among other vineyards throughout the region.  Enrico Serafino's vineyards are located inside Roero DOCG, a famous denomination for Nebbiolo (and white Arneis) wines. The name Pajena is a local slang term for the large birds of prey that are found atop the hills throughout the region and is symbolic of the wild nature found therein.  

Enrico Serafino has expertise in producing Barolo spanning 140 years. Over that expanse of time, the winery has come to control more than 30 acres (12 hectares) of Barolo DOCG vineyards in the renowned areas of Serralunga d'Alba, Castiglione Falletto, and Monforte d’Alba. These communes are all in the part of Barolo with Helvetian soil, which gives full-bodied wines with great longevity.  The name Monclivio refers to the hills in the Barolo region which are covered in steep vineyards.  

Barolo del Comune di Serralunga d’Alba is very well known for its long-lasting, austerity and complexity. The winery has 4.9 acres in the Carpena and Meriame cru, both on the western slopes of Serralunga. The wine is aged 28 months in tonneaux and larger oak cask providing a modern representation of the traditional Serralunga Barolo.

This unique and rare sub-variety of Nebbiolo was largely forgotten across Piedmont over the last decades. When Enrico Serafino was studying the clonal varieties in their historical vineyards in recent years, they discovered Picotener was planted widely across their vineyards. After trial and study, they determined this forgotten biotype of Nebbiolo called Picotener is capable of expressing unique characteristics and a distinct personality worthy of a singular bottling.
