This cascades a chiseled bead of bubbles across a vibrant acid framework, as a mix of saline-minerals contrasts its ripe orchard fruits. The balance of energy, depth and sweetness here is quite impressive, as the Dei Casel tapers off long and unexpectedly fresh

The 2020 Asciutto Rive di Colbertaldo Vigneto Giardino is remarkably airy and fresh yet deep; stone dust gives way to dried flowers, ground ginger and citrus-tinged pear. This is a luxuriously soft and round expression, with silken bubbles and a beautiful balance of saline acidity contrasting its pleasant inner sweetness. Ripe pear mixes with green melon and candied citrus throughout the long and incredibly refreshing finale, as a twang of granny smith lingers. Adami is a master of the Asciutto style, which the winery estimates leaves between 17-32 grams per liter of residual sugar; and yet, you’d be hard-pressed to notice it at all.

Fresh floral scents lead into this wine's flavors of honeycrisp apple, yellow pear and white peach. It's wrapped in a satiny mousse and just enough sweetness (10 grams per liter) to amplify those juicy fruit tones. It's an elegant wine, perfect for a high-end by-the-glass program.

The glera grapes for this wine are the last that the Adami family harvests, as they look for more body and structure in a wine that is meant to age. The family has long made wines in the Col Fondo style, but 2019 is the first vintage as a Sui Lieviti Brut Nature. Its aromas are those of an early-morning visit to the bakery, and the flavors show notes of lemon croissant and soft mint before progressing into crisp apple and lemon zest. The wine shows lovely balance between leesy richness and fresh fruit flavors, and finishes crisp and refreshing.

The NV Valdobbiadene Prosecco Superiore Bosco di Gica punches well above its price point, boasting an intensely smoky and mineral expression on the nose that pulls you close to the glass. Beneath, I’m finding notes of pear and sweet herbal tones. It’s soothing and creamy yet balanced by brisk acids, as ripe orchard fruits satiate the senses, leaving a salty twang that resonates through the finale. Wow. This is a pleasure to taste. This was bottled in September of 2020.

Franco Adami’s grandfather Abele began bottling wine from the Giardino vineyard in the early 1930s. Vines planted on steep slopes in shallow, chalky soils yield glera with crisp acidity that, according to Franco Adami, expresses its fruit character best when produced in the dry (asciutto) style. It unfolds with a complex array of peach, melon and tangy mandarin flavors accented by a subtle note of green herbs. That lively acidity balances the 18 to 20 grams of residual sugar and carries the wine to a refreshing finish.

The 2019 Prosecco Valdobbiadene Superiore Rive di Colbertaldo Asciutto Vigneto Giardino displays musky peaches and pears backed by dusty dried florals and lemon zests. It’s a round, pliant and jovial expression, balancing ripe orchard fruits and sweet spice against vibrant acids. Hints of candied ginger linger through the mouthwatering finale. With just a touch of residual sugar, the Vigneto Giardino comes across as wonderfully balanced and fully satisfying. This was bottled in September of 2020.

The nose of this Prosecco is focused with aromas of tart green apples, Meyer lemon zest and lilies. The refined palate deftly follows the nose and continues the laser-like focus, finishing with a very impressive minerality.
